The grapes used in crafting our Extra Dry Sparkling wine grown in California’s Temecula valley. Muscat Canelli thrives in the warm days and cool nights of the valley making it uniquely suited for sparkling wine production. The Muscat Canelli grapes were picked at 20 brix to help retain much of the acid while allowing for flavor development within the grape. After pressing, the juice was cool fermented and kept in stainless steel tanks until bottling. This sparkling wine was made in the traditional Méthode Champenoise meaning the base wine was fermented then had additional grape juice and yeast added before bottling. Each bottle underwent it’s own fermentation creating bubbles. The bottles were then aged for almost 3 years on yeast that adds mouth feel and structure to the wine. In November 2019, the yeast was discorged and cork finished.
